松茸是一种天然的珍稀名贵野生食用菌类,有极高的营养和药用价值,被誉为“菌中之王”[1-2]。松茸属于食用菌,但也有异于其他食用菌,由于对生长环境十分挑剔,其人工栽培技术尚未成功,属于野生食用菌[3-4]。
四川是我国松茸的主要产区,而川松茸主要产自甘孜州、凉山州和阿坝州海拔1600至4 000 m的山区,年均产量约4 000 t,占全省的80%以上[5-6],为农牧民脱贫增收以及藏区经济发展起到极大的促进作用。川松茸与黑龙江、云南、西藏等地相比,因地理环境、气候、土壤等的差异形成了其独特的品质。近年来,随着人们生活水平提高,对松茸的品质要求也越高。重金属污染是影响松茸品质的重要因素,因此选择来自甘孜州5个县26个乡镇的松茸鲜品,根据其生长环境状况,探究松茸重金属富集的影响因素,对于松茸产业的健康发展具有重要意义。

收集了甘孜州主要出产松茸的5个区县26个乡镇220个批次的松茸,对甘孜州松茸质量安全风险进行评估。
原子吸收分光光度计(厂家:安捷伦;型号:AA240)、原子荧光光度计(厂家:北京海光;型号:北京海光AFS-9531)微波消解仪(厂家:美国CEM;型号:MARS-XP55T)、石墨消解仪(厂家:奥普乐科技集团有限公司;型号:GD25)。

(1)松茸中重金属元素的测定
根据国家标准体系中对食用菌进行监测的内容以及食用菌生长的环境选择松茸中重金属监测的指标,最后确定监测指标包括铅、总砷、汞和总镉。检测方法参照表1所示。
(2)松茸采集地土壤重金属含量的测定
采集松茸不同产地的土壤,采样参照《农田土壤环境质量监测技术规范》(NY/T 395-2012)规定执行,采样点与产品采样点一一对应。然后,对采集地土壤中的重金属进行检测,检测方法参照表2所示。

(3)松茸产地土壤pH值及有机质含量的测定
松茸产地土壤pH值测定参照LY/T 1239-1999,有机质测定参照LY/T 1237-1999。

根据测定结果,利用SPSS19.0软件进行单因素方差分析( one-way ANOVA),探讨海拔高度、土壤pH值和土壤有机质等因子与松茸重金属含量的相关性。重金属浓度以平均值±SD表示,按P>0.05的水准检验结果显著性。

对所采集的220个批次的松茸和土壤中重金属含量的相关性进行分析,结果见表3。松茸中重金属的含量与土壤重金属含量的相关系数为0.2<R<0.5,表明二者间存在正相关性,其中两者间的重金属Pb为弱相关;重金属As、Hg和Cd为中等相关[7]。

土壤pH值能够影响土壤可交换态重金属的浓度,可交换态重金属是植物直接吸收利用的形态[8]。采集样品的土壤pH值分布在4.3~6.8之间,根据pH值的不同,以每增加0.5设置为一个区域,分别为4.0~4.4、4.5~4.9、5.0~5.4、5.5~5.9、6.0~6.4和6.5~6.9。不同pH值区间,选取同一海拔区间及土壤有机质含量区间的松茸样品进行分析;同一pH值区间,选取同种重金属含量无显著差异的松茸样品进行分析,结果见表4。松茸中重金属As和Cd的含量在土壤pH值较低区域显著高于其他区域;重金属Pb的含量则出现相反的变化趋势,重金属Hg的含量无显著变化。

颗粒态有机质的积累能够影响土壤对重金属的吸附和固定,从而影响重金属在土壤中的积聚[9]。采集样品的土壤有机质含量分布在8.2−297.3 g·kg−1之间,根据有机质含量的不同,以每增加50设置为一个区域,分别为0~49、50~99、100~149、150~199、200~249、250~299 g·kg−1。不同有机质含量区间,选取相同pH值区间及海拔区间的松茸样品进行分析;同一有机质含量区间,选取同种重金属含量无显著差异的松茸样品进行分析,结果见表5。松茸中重金属As的含量在有机质值超过200 g·kg−1时,显著升高,重金属Pb则相反;松茸中重金属Hg的含量在土壤有机质超过249 g·kg−1的区域显著增加;重金属Cd在不同有机质含量的土壤中,积累量无显著差异性。

松茸的生长受多种因素的影响,气候因素的影响日益引起研究者的关注[10]。海拔高度是影响气候的重要因素,本研究样品采集地的海拔高度集中分布在3000~4000 m,根据海拔的不同,每上升200 m分为同一区域,共设置5个区域,分别为3000~3199 m、3200~3399 m、3400~3599 m、3600~3799 m和3800~3999 m。不同海拔区间,选取同一pH值区间及土壤有机质含量区间的松茸样品进行分析;同一海拔区间,选取同种重金属含量无显著差异的松茸样品进行分析,结果见表6。重金属As的含量随着海拔高度的升高显著增加;在海拔3800~3999 m之间,含量最高为4.65 mg·kg−1,其他重金属在不同海拔区域的积累无显著差异性。

Analysis of Influencing Factors of Heavy Metal Accumulation in Tricholoma matsutake in Sichuan Province

Abstract: In this study, Tricholoma matsutake from 5 counties and 26 towns in Ganzi Prefecture was used as the research object. The heavy metal content, soil pH value, organic matter content in Tricholoma matsutake were measured, and the influencing factors of heavy metal accumulation were analyzed. The results showed that there were significant differences in the content of heavy metals in Tricholoma matsutake and soil samples collected from different places. The correlation coefficient of heavy metals content between soil and Tricholoma matsutake was 0.2<R<0.5, which indicated that there was a positive correlation. The arsenic (As) content in Tricholoma matsutake increased with the increase of soil acidity and organic matter content, while the accumulation of lead (Pb) was the opposite, that was, the higher the altitude, the higher the Pb content. Therefore, soil and altitude could affect the accumulation of heavy metals in Tricholoma matsutake.
